DeLICIOUS ENERGY TRUFFLES MADE WITH HAZELNUTS, cacao, flaxseed and coconut – a perfect snack to boost your energy levels when you most need it
This is a very quick and easy to make recipe. The energy truffles are a great choice for picnics, as energy fuel before or after exercise and as a healthy sweet treat. They are gluten free and vegan-friendly.
To make them I used my homemade crunchy hazelnut spread, which is another wonderful recipe to try on its own.
Hazelnuts are an excellent source of energy and dietary fibre which can help you stay full for longer. Thus, you will only need one or two of these yummy balls to satisfy your afternoon cravings and increase your energy levels.
The recipe is as follows:
HAZELNUT AND COCONUT ENERGY TRUFFLES
- Homemade crunchy hazelnut spread , 1 cup (See recipe here)
- Milled flaxseed (linseed), (Original or with sunflower &sesame seeds & goji berries) , ½ cup
- Shredded coconut, for coating
Add the milled flaxseed to the hazelnut spread and mix well until fully incorporated. Shape the mixture into small (1-1 ½ inch) balls. Roll the balls in the shredded coconut to coat the surface. Transfer in an air-tight container and keep refrigerated.
