Made with with tofu, this delicious vegan avocado mayonnaise mix can be perfect in sandwiches or wraps, as a dip or a creamy salad dressing.
This is my current must-have salad dressing or dip. It’s creamy, full of flavor and filling. And of course let’s not forget – it’s nutritious.
Since becoming a vegan over a year ago I have been increasingly more curious about individual ingredients, as well as food combing to ensure optimum nutrition. There a few myths about veganism and it’s great to be able to prove them wrong and demonstrate that one can be healthy and full of energy while maintaining a well balanced vegan diet.
It’s important to nourish our bodies in every possible way and use nature’s resources which are in abundance.
This recipe has ingredients that do exactly that and I’ll add a few links with further nutritional information and health benefits.
Ingredients (1 serving):
- 1/2 packet of silk tofu (organic if possible)
- 1/2 avocado
- 1/2 tsp of mustard
- 1/2 tsp of horseradish
- 2 tbsps of nutritional yeast
- 2-3 tbsps of milk alternative (hemp or organic soy milk are both great options. Add more to adjust to your desired consistency)
- 2 tbsps of lemon juice
- Iodized salt to taste
- Black pepper to taste
- Parsley to garnish(optional)
Instructions:
Blend all the ingredients. Serve and garnish with parsley (optional). Best enjoyed fresh.
Store in the fridge for up to 2 days.
Note:
To make it more as a dip add a handful of organic spinach.
I normally have this as part of a single serving. For a bigger batch simply double the ingredients quantity.
Optional other ingredients:
- Mara seaweed seasoning* (this is salty so you won’t need as much added salt)
